1 1/2 cup of Hot Water
1 cup of Milk
4 teaspoons of Active Dry Yeast
3 tablespoons of Sugar
Mix the above ingredients and let the Yeast proof for 10-15 minutes.
Add to the mixture the following:
1 1/2 teaspoon of Salt
3 tablespoons of Vegetable Oil
6-6 1/2 cups of Flour
Let the dough Knead for 8 minutes in a stand mixer.
Let raise, covered, for 25 minutes. Punch down. Let raise again for 25 minutes. Punch down. This helps build the gluten and makes the crumb of the bread better.
Shape dough. I put mine into bread pans. Let raise again.
Trick - Put a pan of water in a warm oven to create a proofer. Turn the oven on for 1 minute or less. Put the bread in here - the steam doesn't let the dough harden on the outside.
Take dough out of oven before it is over-proofed. About 10-14 minutes is all.
Set oven at 375 degrees Fahrenheit. While oven heats up, the bread will finish proofing.
Bake bread for appx 28 minutes.
